What is Crystallisation?
Crystallisation is a completely natural process where the glucose in honey separates from the water and forms tiny crystals. Over time, these crystals spread throughout the jar, giving the honey a thicker or more solid texture.
Every jar of raw honey will crystallise eventually. Some varieties do so within weeks, while others may remain liquid for many months.
Why Does It Happen?
Several factors influence how quickly honey crystallises, including:
- Natural sugar composition – Honeys with a higher glucose content crystallise more quickly.
- Storage temperature – Honey crystallises fastest between 10–15°C, making it common during the cooler months.
- Pollen and natural particles – Because our honey is minimally processed, tiny pollen grains and wax particles provide natural starting points for crystal formation.
Is Crystallised Honey Safe to Eat?
Absolutely! Crystallised honey is just as delicious and nutritious as liquid honey. The flavour, natural enzymes and quality remain unchanged—it has simply changed texture.
Many people actually prefer crystallised honey because it's:
- Easy to spread on toast.
- Perfect for crumpets and fresh bread.
- Less messy than runny honey.
- Great for adding to baking and cooking.
How to Return It to Liquid
If you prefer your honey runny again, simply:
- Remove the lid.
- Place the jar in warm (not boiling) water.
- Stir occasionally until the crystals dissolve.
Avoid using high heat or a microwave, as excessive temperatures can reduce the natural enzymes and delicate flavours that make raw honey so special.
